Many people associate noodles with Pad Thai. However, noodles also go great with many other Thai dishes, such as this one. The squid and shrimp, combined with coconut milk and soy bean sauce add much flavor to the noodles.

INGREDIENTS:

  • 10 oz. noodles (soaked for 5 minutes in water)
  • 14 oz. squid (frozen package - found in most supermarkets)
  • 10 medium cooked shrimp
  • 2 large eggs
  • 1 can coconut milk
  • 5 cups water
  • 3 tbsp. rice vinegar
  • 1/3 cup. soy bean sauce
  • 3 tbsp. palm sugar
  • 2 tbsp. ground chili paste
  • 1/3 tbsp. shallots (chopped)
  • 3 tbsp. olive oil
  • 1/3 cup coriander leaves (chopped)
  • 1 cup tofu (precut into small pieces in package)
  • 2 cups bean sprouts

PREPARATION:

Step 1: In a medium bowl, mix the coconut milk with 1 cup of water, and then set aside.
Step 2: Break the eggs into a bowl and mix together.
Step 3: Heat a pan and using a high heat setting, pour the eggs into the pan and fry for a few minutes, then remove from the pan, roll the eggs and cut into very small pieces.
Step 4: Heat a wok using a medium high heat setting, then add ½ cup of coconut milk and fried shallots. Stir fry until fragrant, then add the squid, shrimp, soy bean sauce, rice vinegar, palm sugar and tofu. Continue stir frying for a few minutes, then add the remainder of the coconut milk and stir occasionally until done (approximately 5 minutes). Place approximately ½ of the eggs and coriander into the wok, then remove the wok from the heat and cover with a lid.
Step 5: Boil the remaining 4 cups of water with 1 tbsp. olive oil, then add the noodles and continue boiling for a few seconds until soft. Remove the noodles and place on each plate.
Step 6: Pour the squid, shrimp and sauce, from item 4 above, over the noodles. Serve with bean sprouts and the remaining eggs and coriander.

Makes 3 servings

Tip 1: If desired, ground dried chili and bananas (also called banana flowers) may be added.

Tip 2: Instead of seafood other ingredients, such as chicken or pork, may also be used with this recipe.
